If I have a project with 20 days left, and I make a 30 day update, I miss out on 10 days I could have spent on projects, correct? Or do I get 10 days off the next project I start?

I've always taken the next ten days off. It doesn't seem fair to do otherwise.

What if it's a thirty day project? Most of us update in fours.
Second of all, I think that was about inactive members since they can't be attacked. If you're being active, then do all the research you want.
Not that I really care, I'll put projects on the waiting list from now on.

Like Maka said, you can make a waiting list/modify your previous log RIGHT before you make the update to transfer the days; that's fine by me.

Well, in every version before now, I've done it where you get every single day; so if you start a 20-day project and update 30 days later, you get 10 days off on the next project in that slot. As I mentioned elsewhere, it's extremely unfair to those that go on vacation or are restricted from the internet, as well as those that simply don't have the time to update every day. If you lose out on any days you're late on projects for, I would probably just quit this version since I usually tend to make larger updates instead of constantly update every day.
